我的外出飲食﹕XXXIX(湘水山莊‧皇后區﹑紐約)
湘菜不但有鹹到打死賣鹽的醃漬火腿﹑鹹魚﹐還喜歡吃半腐食類的東西﹐也就是類似臭豆腐的玩意兒﹐但卻多半是魚類﹔我怕老外朋友不能接受﹐就不敢點了。不過這回哈密兄不在場﹐所以大家可以恣意地點豬肉來吃。 雖然說是湖南菜﹐前菜居然有芥末涼拌象拔蚌這種台菜﹐莫非隔壁的台灣會館滲透進了湘南小館﹖兩道沙畢斯送的涼拌小黃瓜﹐以及涼拌蒜蓉海帶﹐也疑似來自台灣菜。嚴格來說﹐雪菜炒小椒肉絲﹐似乎也未必是湖南菜。…嘿﹖Those are Old School﹗弄點真才實料吧﹖...

特色鲜明湖南菜 湘水山庄
在法拉盛北方大道上有一家刚开业不久的湘菜馆——湘水山庄。湘水山庄有着不同于法拉盛大多中餐馆的宽敞和明亮。湘水山庄的主要菜式是湘菜。据说有很多原材料都是来自远隔千山万水的中国湖南,而厨师也是有着二十多年丰富经验的湘菜高手,因此,惦记湘菜的人来到湘水山庄,可以尝到口感正宗的湖南口味。 剁椒鱼头 湘山老妈夫子肉 提到湘菜,怎么能不提剁椒鱼头。传说在清朝雍正年间,当时正大兴文字狱,有一位著名的反清文人叫黄宗宪。有一天,他被迫出逃,路经湖南的一个小乡村时,投宿在当地的农户家。农家非常贫穷,主人正在发愁用什么好吃的东西招待客人,忽然,她发现了儿子从田间池塘中捕回的一条河鱼,于是将就用它来做菜,当时家中穷得连调料也没有,就将鱼洗净后,用盐和鱼肉一起煮汤,再用自家产的辣椒剁碎后与鱼头同蒸,不想上桌后,黄宗宪吃了觉得非常鲜美。回家后,让家里的厨师将这道菜加以改良,于是便有了今天的“剁椒鱼头”。湘水山庄的剁椒鱼头红红辣辣,硕大的鱼头肉质鲜嫩,配上酱汁和剁椒的辣味儿,真是又辣又过瘾。 毛家红烧肉 湘味卤猪耳 湖南泡菜 小椒空心菜杆 湖南韶山最有特色的菜式要算红烧肉。毛泽东非常喜欢吃这道菜,他在指挥三大战役时,对警卫员说:“你只要隔三天给我吃一顿红烧肉,我就有精力打败敌人。”可见,毛主席对红烧肉的钟爱。在韶山,很多餐馆都将红烧肉作为他们的招牌菜,并美其名曰“毛家红烧肉”。湘水山庄的红烧肉采用肥瘦相当的五花肉,均匀地切成麻将牌大小,再用上等酱油加少量的糖烧制而成,色泽金黄,油光透亮,味道则是香而不腻,口感又粘又糯。另外湘水山庄的湘味卤猪耳,湖南泡菜和小椒空心菜杆都是不错的小菜,吃多了油腻的食物,可以用来换换口味。...
